Fermented Foods - Food Safety Guidance

The British Columbia (Canada) Centre for Disease Control has recently issued an excellent guidance document on the safe production of a range of fermented foods.

Each fermented food review includes:

  • background on the food
  • a description of the food preparation
  • a food flow chart
  • a review of the potential issues with the food preparation
  • food safety control points

A national working group of health inspectors, food safety specialists, and industry fermentation experts worked together to create guidance on fermented foods.
